Ground-breaking news for vegan Culinary advancement:

The Gentle Gourmet in Paris will as of January 1st 2011 be able to offer 4 certficate-awarding vegan culinary programs through the Gentle Gourmet Culinary Institute. Internationally-recognized guest teachers will participate one week in each months program. Four progr...ams will be offered: Program 1 - Vegan cuisine Basics, both savory and sweet, food knowlege, kitchen equiptment, knife skills, all cooking and preparation techniques. Program 2: More advanced dish preparation, vegan nutrition, World vegan cuisines. Program 3 - Elaborate gourmet vegan cuisine, menu elaboration, fine French pastry making and chocolate cuisine. Program 4: professional restaurant program - menu-making, purchases, organization, specific rules, delicatessen and bakery programs, real work experience in our own Paris restaurant and catering service.

The 5-class Vegan Basics program ( Mon--Fri.) and the 5-class Sweet Vegan program  (Mon.- Frid.) are offered on alternate weeks. Classes may be taken individualy or as a certificate program.

Monday, Wednesday and Friday evenings offer a theme-based  cooking class with dinner.
Mon- French regional cuisine.
Wednesday - Seasonal Parisian Gourmet.
Friday - World cuisines.
